Pumpkin Spice Waffles

Yields 4-6

• 1/2 cup brown sugar

• 1/3 cup cornstarch

• 2 1/2 cups all-purpose flour

• 1 tsp salt

• 1 Tbs and 1/4 tsp of cinnamon

• 1 Tbs and 1/4 tsp of ginger powder

• 3/4 tsp ground clove

• 3/4 tsp nutmeg

• 2 eggs, separated

• 2 1/2 cups milk

• 2 cups canned pumpkin

• 1/2 cup melted butter 

Sift together all dry ingredients. Mix the egg yolks, milk, pumpkin and butter together. Using a blender, whip the egg whites until stiff peaks form. Mix all dry and wet ingredients together. Next, carefully fold the whipped egg whites into the batter.

To cook, use a greased 8-inch waffle iron* and ladle a 6 oz portion of the batter into the iron. Cook for approx. 8-10 minutes.

*Any size waffle iron will work. Adjust your batter portion sizes accordingly.
